Carrot Muffins Recipe

Carrot Muffins Recipe

What you will need:


  • 165g raisins
  • 475ml warm water
  • 250g plain flour
  • 1 tablespoon baking powder
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 4 eggs
  • 250ml vegetable oil
  • 110g dark brown soft sugar
  • 330g grated carrots

Method:

  1. combine the rasisins and water in a small bown,leave to soak for 15 minutes,drain water out and set raisins aside.
  2. preheat the oven to 180C,grease or line a muffin tin with paper cases  
  3. in a large bowl sieve together the flour,baking powder,bicarbonate of soda,salt and cinnamon,in a seperate bowl combine the eggs,oil and dark brown soft sugar,beat well.combine the egg mixture and flour mixture,mix just until moistened,fold in carrots and drained raisins,spoon into prepared muffin tin.
  4. bake in preheated oven for 20-30 minutes.

Rice Krispie Chicken.

Rice Krispie Chicken Recipe.

What you will need:


  • 4 skinless and boneless chicken breast fillets-cut into goujons.
  • 250g Rice Krispies
  • Butter for greasing
  • Mayonnaise for dipping
  • Salt and Freshly ground black pepper.

Method:

  1. Preheat the oven to 200C and lightly grease the baking tray.
  2. Put the cereal and some salt and pepper in a bowl and crumble with your fingers until lightly crushed.
  3. Put the mayonnaise and seasoned crushed cereal mix in to 2 separate bowls,ready for dipping.
  4. Dip each piece of chicken first in the mayonnaise,shake off any excess,then dip into the crushed cereal.
  5. Place the dipped chicken onto the prepared baking tray in the preheated oven for 35 minutes until golden,turning halfway through cooking.

Nerd Block Classic Review 

 I was very lucky to receive a Nerd Block Classic to review we were informed they had all shipped out on the 17th and I received mine today which was super fast seeing as I'm based in the UK so if I'm honest i was expecting it to take at least 10-14 days depending on delays.Upon opening the Nerd Block I am not afraid to admit that I was like a kid in a candy shop.

I love the flashicle T.Shirt I asked for a woman's large as I am a 14 as wasn't sure how they would come up,It fits perfectly.





I think I have lost the Cliccors to my son who as anyone that follows my blog knows he has special needs, the Cliccors make a fantastic sensory toy and as they fit on my wrist easily I can always wear them out and take off for him to fiddle with whenever he feels a bit agitated which is fantastic!!

Stardust Review




Stardust

Stardust began in 1998,The initial collection comprised of just 6 pop icon designs that were hand printed using a small heat press onto a range of men's,woman's and baby T.Shirts.
Stardust has since successfully grown into a popular brand with the use of vibrant colour's,quality fabrics and strong quirky designs to create stand out pieces.

Stardust is inspired by popular culture iconography,politics,punk rock and a splash of kitsch!

I have been very lucky to be sent a T.Shirt for my son to test and review,well to be more precise I was sent two tops in the same style purely as my son is really small for his age due to his special needs. We received the T.Shirt in age 1-2 years and 2-3 years(my son is 3 and a half).


We received the Call Of Duty inspired Keep Calm And Kill Zombies kids T.Shirt,I love anything Horror and Zombie related so right away this got a big thumbs up,I loved the black with white writing detailing alongside red splatters of blood,the top itself was very soft and stretchy made from premium 100% interlock cotton.We have used and washed the T.Shirt itself several times and it has retained its colour,the print and its softness,a massive plus ++++

The 2-3 years version does come up too big for my son at the moment so I have nicely stored it ready for when he outgrows the 1-2 years version, The price of this top is just £16.00 which might be more than i would normally pay for a T.Shirt however I would be more than happy to pay for something which has such great quality to it not to mention it's different and certainly stands out from the crowd My son has had so much attention from people when he has worn this top and I am happy to say it was all good responses saying how much they loved it,where can they buy one from ect.






I love Stardust clothing and I certainly plan on looking to buy more items from their website,there is just so much to choose from!

We made Banana Cake!

We made Banana Cake!

Why have I never before realized there was so many ways to use bananas rather than throwing them away or having to eat them as they are or in sarnies?

Well we are finally learning and next up we made a Banana Cake.

What you will need:


  • 170g butter(softened)
  • 170g caster sugar
  • 3 eggs
  • 170g self raising flour
  • 2 ripe or over ripe bananas
Method:
  • cream the butter into the sugar
  • gradually add the eggs and flour
  • mash the bananas and add them to the batter, mix well to ensure there are no lumps as otherwise they will sink to the bottom of the cake(i used our food blender to smooth out the bananas before adding it to the mixture.
  • grease and flour a loaf tin and pour in the batter
  • bake at 180C for approximately 1 hour,or until the blade of a knife comes out of the cake clean-if sticky it needs a bit longer.
  • check after it has baked for 30 minutes and cover with grease-proof paper if it has started browning too quickly to prevent it from burning.



Pitta Pizza's

A new dinner time meal our kids have found they love is Pitta Pizza's

What you will need:


  • Wholewheat pitta breads vary the amount you need dependent on how many each person wants and whether or not you will be eating it alongside anything else.
  • tomato puree
  • 3 ripe plum tomatos,diced
  • grated cheese,we love either  mature chedder,4 cheese or chedder & red leicester.
  • any other toppings you choose can be added on top too.

Method:

  • Preheat oven to 200C and put a baking sheet inside to heat up.Spread each pitta with some of the puree,top with cheese,tomato's and whatever toppings you choose.
  • Place onto the hot baking sheet and bake for 10 minutes until the pittas are crisp and the cheese has melted.
  • Serve alone or with salad,chips,baguette ect.
  • Eat and enjoy.

Rachel's birthday part 2

As you all know from part 1 we decided to treat Rachel and Carla as a birthday and late birthday treat  by going to London.

The first thing we did was visit the The London Dungeons, sadly we could not take photo's however we did get a couple of souvenir ones done.

Loved the black jester and generally everyone all done up ready to entertain as you arrive,was quick to queue up to pay the only thing i found was it was a little too dark around the tills so took a while to find my money off coupon and money as we pretty much couldn't see anything. then we went to join up with the other queue this took around 15 minutes before actually entering however we didn't mind as there was lots of interesting things to look at,touch or hear! the Drop Dead ride.

Our daughter Carla was dragged to the stand against the judge,that was a really funny moment.





Up next was Madame Tassauds

Millions upon millions go to visit Madame Tassauds since they opened over 200 years ago. Get up close and personal with A-list celebrities,sporting legends,heavy weights and historical icons.

I got to meet my idol: Britney Spears!!  I wont lie though I am gutted to find out that Star Wars is joining Madame Tassauds in May this year,I would of loved to see that!
However this was a great attraction and we all loved it even if my teens did ask me lots who this person and that person was!!
We particularly loved the Marvel Experience.










































































































During our trip we also did the London Bridge experience, went along to Piccadilly circus,visited M&M's world,Hamley's,The Disney Store,Buckingham Palace and had a special bike ride to Forbidden planet before tubing back to Black Friar's premier inn,They do a fantastic continental breakfast where two kids under 16 eat for free when they stay and you can eat as much or as little as you want!
