What you will need:
- 165g raisins
- 475ml warm water
- 250g plain flour
- 1 tablespoon baking powder
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 4 eggs
- 250ml vegetable oil
- 110g dark brown soft sugar
- 330g grated carrots
Method:
- combine the rasisins and water in a small bown,leave to soak for 15 minutes,drain water out and set raisins aside.
- preheat the oven to 180C,grease or line a muffin tin with paper cases
- in a large bowl sieve together the flour,baking powder,bicarbonate of soda,salt and cinnamon,in a seperate bowl combine the eggs,oil and dark brown soft sugar,beat well.combine the egg mixture and flour mixture,mix just until moistened,fold in carrots and drained raisins,spoon into prepared muffin tin.
- bake in preheated oven for 20-30 minutes.
